3 Holidays Eats for the Blender Savvy

Apple Pie Ice Cream

Letters to Santa, fighting crowds at the mall, searching for free shipping online, wrapping, trudging through the woods to find the perfect tree, untangling and hanging lights, more wrapping.

After all this, planning and preparing the perfect holiday meal can be the last thing you want to do.

But if you have a blender, or if it’s on your Christmas list this year, there’s some simple desserts you can whip up in a few minutes, without all the prep and wait, or the messy cleanup.

Here are three of my favorites. Each provides a little twist on holiday staples. I use a Vitamix blender for these.

Apple Pie Ice Cream

Ingredients

  • 3 ounces (89 ml) frozen apple juice concentrate
  • ¼ cup (60g) low-fat vanilla yogurt
  • ½ (70g) apple, cored, seeded quartered
  • 1 Tablespoon vanilla extract
  • ¼ teaspoon ground cinnamon
  • ½ (65g) ripe banana
  • 3 cups (720 ml) ice cubes

Directions

  1. Place all ingredients into the Vitamix container in the order listed and secure lid.
  2. Select Variable 1.
  3. Turn machine on and slowly increase speed to Variable 10, then to High. Use the tamper to press ingredients into the blades while processing.
  4. In about 30 seconds, the sound of the motor will change and 4 mounds should form in the mixture. Stop machine. Do not over mix or melting will occur. Serve immediately.

Mocha Mint Shake

Ingredients

  • ½ cup (120 ml) milk
  • 1 cup (230 g) vanilla light or non-fat frozen yogurt or ice cream
  • ¼ teaspoon mint extract
  • 2 Tablespoons (30 ml) chocolate syrup
  • 2 teaspoons instant coffee granules
  • 1 cup (240 ml) ice cubes

Directions

  1. Place all ingredients into the Vitamix container in the order listed and secure lid.
  2. Select Variable 1.
  3. Turn machine on and slowly increase speed to Variable 10, then to High.
  4. Blend for 1 minute, using tamper as needed, or until desired consistency is reached. Serve immediately.

Egg Nog Cheese Cake

Ingredients

  • 1 cup (100 g) graham cracker crumbs
  • 2 Tablespoons (25 g) granulated sugar (for crust)
  • 3 Tablespoons (45 g) butter spread, melted
  • (3) 8 ounce packages cream cheese
  • 1 cup (200 g) granulated sugar
  • 3 Tablespoons (25 g) all-purpose flour
  • ¾ cup (180 ml) eggnog, light or regular
  • ½ cup (120 ml) egg substitute or 2 eggs
  • 2 Tablespoons (30 ml) rum
  • ½ teaspoon ground nutmeg

Directions

  1. Preheat oven to 350 degrees (180 degrees C)
  2. Combine graham cracker crumbs, sugar, and butter spread in a bowl and press into the bottom of a 9” spring form pan.
  3. Bake for 10-15 minutes until light gold. Cool.
  4. Place cream cheese, sugar, flour, eggnog, eggs, rum and nutmeg into the Vitamix container and secure lid.
  5. Select Variable 1.
  6. Turn machine on and slowly increase speed to Variable 10, then to High.
  7. Blend for 30 seconds.
  8. Pour mixture into pre-baked crust and bake an additional 45-50 minutes, or until cake is barely firm to the touch.
  9. Remove from oven and loosen cake rim. Cool cake completely and remove ring.
  10. Cover lightly and refrigerate until completely chilled before serving.

Now, if only the blender could also wrap presents…
